Yuzu is a sour, tart and very fragrant citrus fruit, slightly smaller than a billiard ball. Yuzu is a citrus fruit that is not eaten on its own, but is used as an acidifying ingredient through the use of its juice and peel. The taste is reminiscent of somewhere between a classic Eureka lemon and an Oro Blanco grapefruit, but still has its own unique scent and flavor. It is a little more floral and tart and absolutely wonderful. It smells so good that the Japanese use yuzu as a perfume and ritually bathe in yuzu during Toji (winter solstice).
